Why Norfolk Salt?
Long before refrigeration, freezers and chilled transport, salt was essential to daily life. It preserved food through the winter months, cured fish landed along the coast, and fuelled trade between communities. Along the shores of Norfolk, salt production was once a thriving industry woven into the fabric of coastal life.
Norfolk's Salt Heritage
The story of Norfolk salt begins thousands of years ago, dating back to at least the Bronze Age. The tidal marshes of Norfolk provided the perfect conditions, with seawater regularly flooding the landscape leaving salt-rich sediment in its wake, which the early communities learned to harvest. It was an extremely labour intensive but effective process; collecting the salt-rich silt and washing it to create concentrated brine, then boiling the brine in vessels until crystals began to form.
The Norfolk Coast
Norfolk’s landscape, climate and coastal environment play a defining role in the character of its sea salt. Drawn from the pristine North Norfolk coastline, the seawater is slowly transformed by nothing more than sun, wind and time. These natural conditions influence every harvest, creating mineral-rich crystals with a distinctive depth of flavour. Much like a fine vintage, each batch reflects a unique snapshot of Norfolk’s weather, environment and coastal heritage, resulting in a salt that is truly shaped by its place of origin.

Why is Norfolk known for salt?
Norfolk has a long and fascinating connection to salt production dating back centuries. Its expansive coastline, clean seawater and favourable coastal climate made it an ideal place for harvesting salt. Today, artisan salt makers continue this tradition, drawing on Norfolk’s maritime heritage and natural environment to produce distinctive sea salt that reflects the county’s unique sense of place.
What makes Norfolk salt different?
Norfolk sea salt is shaped by the quality of the local seawater and the slow, natural methods used to produce it. Harvested from the North Norfolk coast and formed through the combined effects of sun, wind and time, it develops a clean, mineral-rich flavour and delicate crystal structure. The result is an authentic sea salt that captures the character of the Norfolk coast in every batch.
Does location affect flavour and texture?
Just as soil and climate influence wine, local environmental conditions can affect sea salt. Factors such as seawater composition, weather patterns, temperature and wind all play a role in crystal formation. This influences both flavour and texture, meaning each harvest carries subtle variations that reflect the specific conditions of the Norfolk coast at that moment in time.
